5.5: Baking Powder. Baking powder is a dependable, high-quality chemical leavener. To be effective, all baking powders rely on the reaction between one or more acids on sodium bicarbonate to produce carbon dioxide gas. Just as with yeast leavening, the presence of carbon dioxide gas creates air bubbles that cause the product to rise.
The second "action" refers to the release of gas when the batter is heated in the oven or on a griddle. This relies on the presence of the slower acting acid, S.A.S. which only combines with soda when the temperature increases. Double acting baking powder: Double-acting baking powder will start to chemically react when it is mixed with wet ingredients, but this type of baking powder also contains what is known as a "high heat" acid, which gets activated by heat. A double-acting baking powder will react and create gas bubbles twice: once when added to liquid, and again when exposed to heat. Baking powder goes to work immediately when mixed with a liquid and provides a second lift when it hits the heat of the oven. The formulas used to make baking powders today are much more carefully calibrated than when this leavener was first packaged for home cooks nearly 200 years ago, but the chemistry remains the same.
